Mini Crispy Baked Ground Beef Tacos in Just 35 Minutes

Mini crispy baked ground beef tacos are one of my favorite things to make. They’re crunchy, cheesy, and so easy to throw together.

I love making a big batch for taco night or when I have friends over. Whether it’s dinner or just a fun snack, they always disappear fast!

Ingredients:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning)
  • 1/2 cup water
  • 12 mini taco shells (hard or soft, depending on preference)
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 1/2 cup lettuce, shredded
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/4 cup salsa (optional)
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven: Preheat your oven to 400°F (200°C). Place your mini taco shells on a baking sheet.
  2. Cook the ground beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until soft. Add the garlic and cook for another minute until fragrant. Then, add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  3. Season the beef: Stir in the taco seasoning and water. Simmer for 3-4 minutes until the mixture thickens and becomes flavorful. Taste and adjust seasoning with salt and pepper if needed.
  4. Fill the taco shells: Spoon the seasoned beef into each mini taco shell, filling them generously.
  5. Bake the tacos: Sprinkle shredded cheese on top of each taco. Bake in the preheated oven for 10-12 minutes, or until the taco shells are crispy and the cheese is melted.
  6. Garnish and serve: Remove from the oven and top with shredded lettuce, diced tomatoes, a dollop of sour cream, and salsa (if desired).
  • Optional Variations:
  • Toppings: Add sliced avocado, jalapeños, or olives for extra flavor.
  • Heat: Add a sprinkle of chili powder or hot sauce for a spicy kick!
  • Sides: Serve with a side of Mexican rice or guacamole.
